CheddarCheddar is a small town and cave system in the South West of England. I used to live near there when I was a teenager. There was always plenty of this delicious cheese in the kitchen. And when I started cheesemaking, this was one cheese I had to make. The climate of Okinawa, the water the cows drink, the grass they eat and the air they breathe is very different to South West England. And so our Cheddar could not be exactly the same as the original,
