Kohaku Smoked CheeseKohaku is our smoked cheese. It's named after its colour, kohaku means amber in Japanese. Good friends of ours, Kamimura Shuzo, an Awamori distillery matures one of their products in whisky barrels. When the barrels get old and leaky, they give us the wood, we crunch it up and use it to smoke cheese. The result is a very different kind of smoked cheese, with a taste and aroma similar to ham or bacon. Serve as is or melted onto chicken, hamburger, etc.
